Hot Cakes.

This morning I woke up craving pancakes.  A quick search of Google revealed a recipe that produced light, fluffy and delicious pancakes.  The milk with vinegar thing seemed a little weird but then we figured out it was in place of buttermilk.  And who ever buys buttermilk?!   Topped with a bit of powdered sugar and served with a side of berries... they totally hit the spot.  Here's the recipe.

Fluffy Pancakes (serves 4... or 2, if you are us):
  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • cooking spray
  1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour."
  2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.  Whisk egg and butter into "soured" milk.  Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  3. Heat a large skillet over medium heat, and coat with cooking spray.  Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface.  Flip with a spatula, and cook until browned on the other side.

I managed to get a few workouts in this week.  These workouts were by no means difficult but it sure felt great to do something and to move my body and stretch.  I'll admit that I was a bit sore in the shoulders and back after 30 measly minutes of yoga.  But I sort of love being sore so I was okay with that.  Here's the rundown of my workouts for the week:
Oh man.  It felt amazing to do TRX again.  Of course I modified the workouts so that there was no additional pressure or strain on my abdomen.  And since we did this workout while nearing the witching hour, we put Alice in the stroller and one of us walked around in circles with her while the other did a set of exercises and then we switched.  Hey, it worked!  She managed to stay asleep for the duration of our workout.  And the second we finished she promptly had a meltdown.  As I carried her back to our apartment, I thanked her for letting me have 45 minutes of quiet time to get a workout in.  And I am pretty sure she looked up at me at that point and winked and smiled.  Thanks, Alice.

  1. I love pancakes. My favorite was I-Hop country pancakes, I think cream of wheat was in them. They don't have them on the menu anymore. I remember taking you to an I-Hop in Logan UT, after you ran a marathon. You and your friend Anne J. Good memories. I'll have to try this recipe. xo
