Kale Chips?!


A few weeks ago we were out with friends for lunch and I had a delicious burger topped with homemade kale chips.  Since Alice was eating off my plate, I gave her a bite or two and she gobbled them right up.  I wasn't sure if she actually liked kale chips or if she was just so distracted by being out in a restaurant that she was eating everything I gave her.  Since we've struggled a bit lately with her picky eating (especially vegetables!), I figured I'd give homemade kale chips a try.

And she loved them!

I couldn't believe it.  One after another, she just kept shoveling them in her mouth.  They weren't the neatest baby food item we've ever given her but hey, at least she was eating something green and good for her and not squealing and shaking her little head at me. 

I followed a kale chip recipe I'd made before except I substituted apple cider vinegar for the red pepper flakes and used only a teensy bit of salt to keep them extra baby-friendly.  And, to get a few more new things into her little tummy, I made these muffins (thanks for the idea, Lilly) and this hummus (and thanks to you, too, Jen). 

So far, she's liked all of those things!  Fingers crossed it stays that way.

    Milo (my 5-year-old) still eats kale like it's going out of style. Now to work on the other two...

  2. So much fun to see her reactions. AND it's ok to get green on your teeth... that's what makes it fun to eat.

  4. Little kale-loving babies are a dream of mine! I make that same face when we run out of kale chips ;)

    There's a running joke between Cardy + Jenn and Devon + I that when Cardy helped Devon set up the spot where he proposed he should have scattered some chard or kale bits around instead of rose petals.
