One week more of unemployeed freedom.


Actually, I really can't wait to start working again.  Six weeks off was a loooooong time.  But it was good because while I wasn't working I was able to get our new home put together, await furniture deliveries, get the car registered in Massachusetts, and blah, blah, blah other stuff that needed to get done.  I'm looking forward to having coworkers, having a paycheck, and having the routine of working again.   

I woke up early and got REALLY excited to run this morning... I'm not sure what came over me but I think it was the sweet playlist that I put together before heading out the door (you know... Ke$ha, Zeppelin, Timberlake, Michael Jackson, Katy Perry, Journey... all the good stuff) Sometimes all you need to motivate for a run are some good tunes and an awesome route... today I had both.  Gooooood times.

I'm heading to the grocery store in a minute to get ingredients for dinners this week.  I've been having a difficult time planning meals without meat which is weird BECAUSE I WAS A VEGETARIAN FOR SEVEN YEARS!!  WTF??  For some reason, meat-free dishes have been eluding me and I can't remember what I used to eat back when I had a conscience (kidding...).  On tonight's menu... PIZZA!  I've heard that Trader Joe's has uncooked pizza dough that is the bomb.com.... then we'll pile 'em high with veggies and voila! Dinner is served.  Later in the week?  Vegetarian chili!  Mmmmmmm.... BEANS!

Anyone have ideas for vegetarian dishes? I need IDEAS!!

  1. FALAFEL! That's my favorite vegetarian food, but I don't think I've ever made it. I love making veggie burritos, stirfries, and black bean burgers.

  2. AWESOME RUN!!! That sounds like my kind of playlist!! I am so happy for your new job and that you are excited for it. TJ dough is amazing...I am jealous. I love vegetarian lasagna. And PS I do have a coach, he own the running store and it is awesome....he always has the best tips and I am trying to include them on the blog for everyone else:)
