Empanadas.

Have I mentioned how much I love Real Simple?  Seriously.  That magazine is my go-to when I have no idea what to make for dinner.  They have a monthly article about 10 Ideas for... whatever and this month, it's ground turkey.  I always love this part of the magazine because they take a basic ingredient and make a ton of easy dishes that can be whipped up for dinner with very little effort.  So last night I made the Ground Turkey Empanadas and, oh boy!  They were delicious.  And ridiculously easy.  Here's the recipe.


Ground Turkey Empanadas (serves 4):
  • 3/4 pound ground turkey (I used half dark meat and half white meat)
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 1/3 cup raisins (I absolutely omitted this step... I despise raisins)
  • 1/3 cup olives, chopped
  • 1 carrot, chopped (this wasn't part of the original recipe but it added nice color)
  • 1 tsp cumin
  • 2 pie crusts, thawed
  • Salt and pepper
In a large skillet, add a tablespoon of olive oil and add the onions, garlic, turkey and cumin.  Break up the turkey with a spoon into bite-sized pieces.  Once cooked through, add the raisins (BLEH!!) and olives and stir to combine.  Salt and pepper to taste.  Remove from heat.  Take the pie crusts out of the pan and cut in half.  Add turkey mixture and fold the dough over, sealing the edges.  Place on a baking sheet and place in a pre-heated 375F oven and bake until golden brown, about 20-25 minutes.  Enjoy.  Share, if you must.

The pie crust was deliciously flaky and the filling was wonderfully flavorful.  And seriously.  These were so easy to make.  I was a little intimidated using pie crust but they turned out really well.  And you could do so many different fillings!  Like that yummy shredded chicken I made awhile back or a mixture of sauteed vegetables.  Mmmmmm.  The possibilities are endless.

  1. Sounds delicious - I love empanadas! I made them over the summer and was surprised that they weren't nearly as intimidating as I'd expected.

    Real Simple is amazing - my favorite thing about their recipes is that they don't require shopping for 2 dozen ingredients, but are usually just as flavorful as if you had incorporated a full page's worth of steps!
