Exciting, right?
What is exciting is that on Sunday before I headed into work for the night, Lee and I made homemade whole wheat pasta with our new pasta maker! Wow. Was it delicious. And, no joke. So easy! I know I say that a lot with my recipes but this one really is easier than you'd think. We made one batch (which took less than a hour) and we now have a few servings of fresh pasta in our freezer, ready to be plopped into boiling water for quick weeknight dinners. Here's the recipe:
Whole Wheat Pasta (recipe from KitchenAid pasta maker manual):
- Place the following into mixer bowl: 4 large eggs, 3 1/2 cups whole wheat flour, 2 tbs water, 1/2 tsp salt. Attach bowl to stand mixer with flat beater. Turn to speed 2 and mix for 30 seconds.
- Exchange flat beater for dough hook. Turn to speed 2 and knead for 2 minutes.
- Remove dough from bowl hand knead for 2 minutes. The dough should be elastic and pliable, but firm. Not soft and doughy like bread dough. Divide dough into 8 pieces.
- To make the pasta using your KitchenAid pasta maker, follow this recipe's steps 12 through 20.
We let our fresh pasta dry for about an hour and then we formed it into little nests dusted with flour and froze it in 2-person servings to use another day. We did have our fresh whole wheat pasta on Sunday night with those delicious turkey meatballs and that vegetable-filled spaghetti sauce that I made a few weeks back. So good. This KitchenAid is changing my life!
