PB Cookies.


My KitchenAid made her maiden voyage yesterday.  My husband and brother-in-law were still running wild around the city of New York so I thought what better way to pass the time than to acquaint myself with my newest kitchen appliance.  I worked a night shift last night, so to help shake the sleeping-all-day fog from my head I decided to make some peanut butter cookies.  Honestly, I wanted to make chocolate chip cookies but I didn't have chocolate chips and a trip to the grocery store just wasn't in the cards.

I used the peanut butter cookie recipe from the back of the KitchenAid manual.  This is an identical recipe to the one I used, it just happens to be called Joey's recipe.  I have news for you, Joey.  You stole that recipe from KitchenAid (or they from you).  But whatever.  The cookies are delicious, either way. 


Ever wonder what happens when you forget to add the baking soda and salt to your cookies?  Well that is exactly what I did with these babies.  Whoooooops.  Sleep deprivation and baking obviously don't always go hand-in-hand.  Luckily they turned out great.  I guess I'll have to make them again someday with all the ingredients.  Revolutionary, I know. 

Do you ever forget to add an ingredient when cooking?  Then what do you do??  For some reason, it happens to me quite a bit.  Why?  Who knows.  Maybe I am a bit of a scatterbrain in the kitchen (or in general).  With these cookies, I realized my mistake after I'd already put the first batch in the oven so I added the missing ingredients to the remaining dough (in smaller amounts, of course) but I didn't notice much of a difference!

  1. Yummm my mom used to make these exact cookies when I was younger! She used to add chocolate chips sometimes too. I loved eating them right out of the oven...so soft and chewy and warm!!!
