I found motivation. I guess I do cook for myself when Lee is out of town. But this isn't really cooking. Salad = pre-washed spinach + tabouli + tomato slices. Sweet potato = microwaved for 5 minutes + maple syrup + S&P. Steamed broccoli (I actually turned on the stove for this one). Fake chik'n tenders = open package + microwave for 1.5 minutes (the chik'n tenders are better cooked in a pan on the stove but that was too much work). And there you have it! Dinner is served!
Have you ever microwaved a sweet potato? I'm sure it nukes some of the nutrients but it's so quick and easy and it tastes soooo goooood, especially with a little sweet (maple syrup) and a little salty (Kosher salt and fresh ground pepper).
Do you ever eat fake meat products (Taco Bell doesn't count :-)? I used to all the time when I was a Saint vegetarian. Now... not so much. It's not that I don't like that stuff... it's just that Lee doesn't!
Funny because I NEVER microwave anything but last night I was sooo hungry for mashed sweet potatoes in the middle of the rest of my dinner prep so I went ahead and nuked em. They were mighty tasty. :) I don't do fake meat products...I guess if I'm REALLY craving meat I'll just go for the locally grown organic real stuff :) Your dinner looks good to me!!!!
