Over-abundance of rhubarb? Make this perfect summer cocktail.
As is always the case when we're in Canada, I am eating and drinking like a queen. My mother-in-law makes delicious meals and desserts but one of my favorite things to enjoy when we are here is her refreshing and tart rhubarb martinis. Since most rhubarb recipes seem to be of the baking variety, I thought I'd share this cocktail recipe with you! So here you go.
Rhubarb Martini (serves 4)
- 10 cups rhubarb, chopped
- 3 cups water
- 1 strip orange rind
- 1 strip lemon rind
- 3/4 to 1 cup sugar (less sugar for more tartness)
- 8 oz raspberry-flavored vodka
- In a large saucepan, combine rhubarb, water, orange and lemon rind. Bring to a boil over high heat, then reduce heat, cover and simmer for 10 minutes or until rhubarb is soft. Strain through fine mesh strainer into a clean saucepan. Stir sugar into rhubarb juice and bring to a boil to dissolve. Chill.
- Making two drinks at a time, add 4 oz of vodka and 12 oz of rhubarb juice over ice into a shaker. Shake vigorously! And then pour into a martini glass. Garnish with a raspberry or a slice of citrus. Enjoy and get ready to make another.
These martinis are so smooth and so tart and so summery. They would also be delicious with plain vodka or even lemon vodka. Make them! You won't be dissappointed.
