Soup for the Soul.


With this bone-chilling weather we've been having, I've been craving a hearty beef stew.  I saw this recipe for Beef and Butternut Squash Stew and just had to try it.  The wintertime vegetables and the chunks of stew beef sounded like the perfect combination for dinner on a cold winter's night.

Of course I made a few modifications.  I didn't have a full cup of Marsala wine so I used what I had left and then added red wine to get the amount needed.  Also, at the end of the simmering, I added a few handfuls of kale to get even more vegetables into this hearty dish.

Overall I'd give this soup an 8 out of 10.  It was rich and hearty and filling but, for some reason, the beef wasn't as tender as I'd hoped.  Maybe I didn't sear it well enough at the beginning or maybe it needs more than an hour to cook or maybe it was the stew beef I got from Whole Foods but it was a little tougher than I'd expected.  Who knows.

And that wine in the top picture?  Ya.  Totally gave me heartburn after just one tiny sip.  So my husband finished it off for me.  What a nice guy.
