Today is a very special day. But I will get to that in a minute. Now that we're home, I really looked forward to cooking a special Sunday dinner last night. I missed cooking while on vacation!! Seriously. I enjoy it. Last night's meal was a new take on an old favorite.
Did you eat pot pies as a kid? We sure did. Growing up with a single-and-working mom, we ate a lot of frozen dinners like pot pies (chicken was my favorite), chicken nuggets, tater tots and (of course)
Shake N' Bake pork chops! I'm sure we ate fruits and vegetables, too (I think we did). Anyway, it's been years since I've had a pot pie and I have definitely missed them. So when I saw this
Mushroom Pot Pie recipe in Real Simple this month, I got so excited. It's like the adult version of my childhood favorite! And with fresh and healthy ingredients. I served ours with a spinach salad with a homemade honey-mustard vinaigrette. Tasty. And it made for awesome leftovers today. Try it. You won't be disappointed.
And then we had dessert! I wish I could say that I made that beautiful bread, but then I'd be lying. I bought it at
Clear Flour Bread Bakery in Brookline.
It is whiskey chocolate bread. No joke. And, OH! Is it
good. Ya, that little loaf didn't stand a chance in our house. It is totally gone.
And lastly, today is my husband's birthday.
Happy birthday to the most loving and caring and dedicated man that I know. I couldn't be happier to be sharing and creating a life with you. I look forward to every day together and all that lies ahead of us. Cheers to many more happy and healthy birthdays.
Are you a fan of pot pies? When we were kids, we used to carve our initials into the pies so that we didn't mix up the chicken (for me) and the beef (for my sister). I remembered that little memory last night as I put a heart in the top of ours. So fun.
Non-Garmin stats: Yes, I'm bringing back the (non)Garmin stats just for today. This morning I did an awesome 5-mile speed walk while I listened to NPR's This American Life. The episode was about middle school and experiences of a few different kids and how awkward and difficult that age can be. I know I was pretty awkward and unsure of myself at that age! Were you??
