Just a few more hours.

My main squeeze is coming home tonight.  I can't wait to see him!  In anticipation of his arrival, I've been getting things done around our apartment.  I've been cleaning and vacuuming and organizing and grocery shopping and cooking and baking and showering and getting myself spruced up all so that we can enjoy the next few days together rather than doing boring chores.

It is drippy and dreary outside today, which is my favorite kind of weather for cooking.  I feel like I'm in a bit of a recipe rut so I turned to my Real Simple magazine for some new dinner ideas.  There are so many delicious recipes in this month's issue but I finally settled on the Easy Turkey & Parmesan Meatballs.


They were so easy to make!  And sort of fun, too.  I made about 45 or so meatballs.  I cooked half and froze the other half (uncooked) for quick and easy weeknight dinners.  The meatballs can be used in meatball soup, spaghetti and meatballs, or a meatball sandwich!  Tonight I'll toss the cooked ones in that hot meatball soup for a perfect meal on a rainy night! 


Have you tried the No Pudge! Fudge Brownies?  They are so rich and chewy and fudge-y, you won't believe they weren't made with butter and eggs.  I broke the 'no pudge' rules, though, and added chocolate chips to the top (naughty, naughty!).  I can't wait to have one of these tonight with a glass of milk while snuggling up on the couch with Lee.

Are you a Real Simple subscriber?  If not, I highly recommend that magazine.  So many delicious recipes and skincare tips and decorating ideas and fashion finds!  I look forward to getting the new issue every month.
